Le Gabriel - La Réserve Paris
"A modern gastronomic tour of the Champs Elysées."
This 19th-century Napoleon III-style mansion is a fine example of French architectural heritage, with sumptuous materials such as gilded Spanish leather and Versailles parquet floors, as redesigned by Jacques Garcia. Here, Chef Jérôme Banctel showcases his unique culinary personality through two menus: The "Virée" menu pays homage to the chef's native Brittany in north-west France, while the "Périple" menu is an "invitation to travel around the world", including Japan and Turkey. In Japan, the chef discovered the wonderful texture of "limewater" for cooking.
These high-quality recipes combine a wide range of flavours and senses, with rich and hearty secret sauces that are the key to understanding the restaurant's cuisine. The Michelin Guide has commended the combination of carrots with peppercorns and ginger, artichoke hearts with cherry blossom vinegar, and numerous other pairings.
